Shrimp is by far one of my favorite kinds of seafood… and really one of my favorite forms of protein too! It’s light, versatile, and goes with almost any kind of meal – breakfast, lunch, or dinner. So shrimp will be the star of today’s post!
For the Super Bowl over the weekend, I tried a new recipe I found online for Light Coconut Shrimp. I used an entire bag of small already-cooked shrimp, and it made about 60 of them! Great for throwing on a salad, slicing up and incorporating into an omelet, or just eating them cold out of the fridge as leftovers! This will definitely be a staple recipe in my book!
Clearly, I am all about simplicity and deliciousness with my recipes, so here is another great recipe for Hawaiian Style Garlic Shrimp. Garlic doesn’t always agree with my palette, but on shrimp? It sounds heavenly! I would probably try to use a little less butter and more seasoning when making this, but that’s just my opinion. I don’t mind if the shrimp are a little drier!
Fitness Magazine came out with a shrimp and quinoa recipe that sounds really interesting; I haven’t tried it yet, but I am a big fan of quinoa, shrimp, and tabbouleh… so put them together? YES I would try this Greek-style Shrimp with Quinoa Tabbouleh.
The next recipe I found is a home-run, especially for people like my sister and me who LOVE PESTO! Grilled Pesto Shrimp… what more can you ask for? My grandma frequently gives us her homemade pesto sauce, so we can just toss that all together and make skewers for summer. Perfection.
Lastly, I wanted to highlight how shrimp can be used in a breakfast meal. Shrimp and Grits is a very popular Paleo and Southern dish. The bacon and cheese and shrimp combination cannot be topped! Definitely trying this for a brunch this weekend. Shrimp is on the menu!
