What a beautiful Tuesday morning isn’t it?? I want to start out with a shout-out to my best friend and lovely sister Mandaline, who turned 22 today 🙂 #hollaatyogirl
So today’s tastes focus on one of my favorite holidays – St. Patrick’s Day! I come from a very solid line of Irish descent, and take immense pride in my beautiful Irish heritage (as most Irish folk do) – straight from the Emerald Isle! I’m hoping these recipes inspire you to throw a St. Patrick’s Day party for yourselves and friends, because, as we all know… Everyone is Irish on St. Patrick’s Day!
For starters, to stay with the green-theme all day long (keeping the holiday spirit going strong!), this Lucky Charmless Vanilla Green-Tea Granola sounds like a perfect and healthy way to start off! Yes, it’s very healthy, and yes it’s vegan, but we all know you probably will be topping off the rest of your calories with Whiskey and other St. Patty’s desserts, so this recipe looks perfect to me!
Another very simple and healthy breakfast to kick-start the day could be this delicious and light Creamy Green Smoothie! If you know me, you know I love my smoothies, especially first thing in the morning, so this one gets my vote too.
Now on to the traditional Irish foods – Irish Bread Pudding. Yummm, does this look incredible or what? And combined with a Caramel Whiskey Sauce?? Yes, I would eat this for breakfast, you got me!
I could not resist including these adorable Shamrock Tortilla chips in this post – they’re simple, and super delicious! I am a big tortilla chip fan – and spinach chips sound right up my alley! I will definitely be including these in my menu for St. Patty’s!
Who has a St. Patty’s day party without traditional Corned Beef Sandwiches?? (Aside from all you vegans and veggies out there 🙂 of course!) My family has perfect the corned beef sandwich, and we always stock up on it for this special holiday. I found a really delicious recipe for a Crunchy Corned Beef Sandwich that just looks PERFECT too! I would substitute the rye for gluten free bread or a wrap, but the filling of the sandwich looks mouth-watering! Thoughts?
And for dessert? Green Mint Chocolate Chip Cookies. Ummm, completely yes!
Last but certainly not least – I am most excited about this recipe I just found today! Raw Key Lime Pistachio Bites – following the green holiday theme, AND it’s 100% raw, which is key in my book (see what I did there?). With only three ingredients, I definitely can swing this! Might make them tonight… just to taste test 😉
