I just cannot get enough of this 50 degree weather in Wisconsin! Seriously, 50 degrees is like 90 degrees anywhere else. It just feels so much warmer! Definitely perks up my attitude 🙂 And Happy Shannon = cooking and cleaning nonstop. Yep, I like to think of it as a gift haha! No hating!
Lately… I have rediscovered my LOVE for goat cheese. Lactose intolerance SUCKS (obviously) but this type of cheese is so easy for me to digest, I have zero symptoms after eating it. Except the symptom of happiness. 🙂

This incredible looking breakfast pastry immediately caught my eye too. A Goat Cheese Tart with Honeydew and Blackberries. Now I’m not the biggest fan of sweet in the morning for breakfast, but this pastry dough and goat cheese combo with honey and blackberries sounds absolutely DECADENT.
I actually make this quite frequently for ANY meal of the day. Anything avocado. Anything goat cheese. Anything with crusty Italian bread. Need I say more? Goat Cheese & Avocado Toast wins my vote!
