Guys. I had the most DELICIOUS dinner last night… while watching more Harry Potter. We’re on a KICK! It’s the best thing ever, really…
So yesterday happened to be one of the most hot and humid days we’ve had yet this summer in Wisco. So…naturally…we decided to cook hot things on the stove. Makes sense to me…
We loaded brown rice into a sauce pan, diced up some raw skinless chicken tenders, and chopped pretty much every veggie I could find in my fridge. Snap peas, shelled peas, red bell pepper, mushrooms, onion, garlic… I think thats it?
We threw the chicken into a frying pan, and cooked it to about 80% done, until there was only a tiiiiny bit of pink left in it. Took the chicken OUT of the pan, and threw in all the veggies we had just diced into that delicious chicken juice, with a lot of WONDERFUL spices, and some tamari gluten-free soy sauce.

After the rice was done, we cracked 2 or 3 (can’t remember) eggs in, fried it up, and combined the veggies, chicken and rice all in the big frying pan. Voila!
It was scrumptious and you should totally try it. It’s so simple to just throw in whatever you have in your fridge, and it’s totally customizable! Which is MY kind of recipe 🙂
I made dessert, which was a spin on the “healthy banana ice cream” that’s been going around 🙂 I threw in some frozen berries with the bananas, some unsweetened dark chocolate cocoa powder, and a few frozen cherries on top for that extra swing of melatonin 🙂
Wonderful wonderful wonderful. Seriously addicted that stuff ^^.
This morning, I had a wonderful workout strengthening my upper back. I did a bunch of rows, pull down variations, and core work. Phew!
