Happy Wednesday everyone! I am still cruisin’ through training at my new job, loving every second, and my days are flying by! With marathon training every day with Patrick, new sessions and training at work, meeting hoards of new people… I have to make sure that I plan ahead for our meals. We both get home roughly around the same time every night, and if I can help it, I highly prefer home-cooked meals. And luckily…we both love cooking 🙂 Separately, but of course preferably together ❤
Literally in the few days since Sunday, I have cooked more than I have in MONTHS. I found a few recipes I really wanted to try and said, WHY THE HECK NOT. Let’s do it now 🙂
So here’s my short recap of my deliciousness that’s been wafting through our kitchen this week!
Blueberry Muffins. HOLY AMAZING. I found a recipe online and doctored it up to try something new. So here’s what I came up with:
1.5 cups flour
2 tsp baking powder
1/4 cup sugar
1/4 tsp salt (or more…)
1 tbsp Vanilla
Add 1 egg
1/4 cup coconut oil
1/4 cup yogurt (I used Chobani Vanilla Greek)
1/2 cup almond milk (or any milk is good)
Add lotsa blueberries. I think maybe 2 cups? Depends on how dense you want them to be!
Bake at 425 for 5 minutes, then reduce temperature to 375 for 16 minutes. Or 15-20 depending on how you know your oven…
SERIOUS HEAVEN you guys. I’ve made two batches in 4 days. That’s how fast we go through them haha!
I made this Zucchini Green Chili Cornbread recipe last night… but decided not to use the cheese. And regret it. The cheese clearly adds a BANG and chewy decadent taste to the bread, so next time, cheese it is!
Turkey burgers and pretzel buns. A CLASSIC dinner for us 🙂
Sauteed veggies in coconut oil. CANNOT GET ENOUGH. And it’s the perfect lunch for work.
Lastly, Patrick has a craving for chili. Often. And I’ve never made it or even tried to make it. So I thought I would give it a whirl with the cornbread last night. Here’s the recipe for “Seriously, the best healthy turkey chili“. And it turned out SO GOOD, if I do say so myself. AND this recipe gave us a ton of servings, so I can package these up for him for lunches. Easy peasy!
