Hellooooooo friends! Eesh, what a busy week. Tons of running, family dinners, and on top of that, I was on-call for work all week. AKA not exactly Shannon’s best skillset (waking up late at night to problem solve and escalate issues that our customers have!). Haha, but luckily, I.AM.DONE.TODAY. 🙂 My body is going to happily sleep hopefully 10 hours tonight and I can rejuvenate after being fairly on-edge and anxious all week. I just want to help our customers, ya know?? Anyway…
All that being said, we had a great week of eating, as easy and basic as it was. No crazy meal planning, but we still had our infamous turkey burgers and Brussels sprouts, egg sandwiches, and of course some delicious pizza 🙂
Yes I have a ketchup addiction. Sometimes. When I want it, I want it.
Bet you can’t guess what this is… Cornbread? nope. Lemon bars? nope. It’s breaded cod 🙂 We baked it, and even though it’s a bit bland, it turned out pretty darn good! We baked a TON of it for Patrick’s lunches so I’m pretty excited that my first time really making fish went well. I’m not really a fish person, but whitefish and cod I will eat 🙂
We’ve been doing really well on our marathon training too! WE DID 19 MILES ON SATURDAY! In 70 degree weather! And we didn’t die! We stayed pretty hydrated, had 2 Gu’s each, and paced ourselves up and down the hills around our place. I’m so happy we did so well, and thankfully, I’m really not THAT sore today. Howwww does that happen?!
Also, I’ve been still joining in a bunch of yoga challenges, which are always so fun. I love having my mat in the middle of the living room and just practicing poses and inversions 🙂 So peaceful and so happy to be able to do this in my own place!
Also, we have been LOVING our coffee we bought in Hawaii last November. Kona Mountain is seriously so decadent and fantastic on a Sunday morning when we just lounge around the apartment 🙂
On Sunday we went to brunch with my NOW partner and lovely lady friend Blair and her fiancee John. We went to Juniper 61, which HELLO is so freaking delicious. We had only been there for dinner before, and their brunch did NOT disappoint. YUMMM.
Oh, and did I mention we biked there? 🙂 YAY! On my new bike! Such a perfect day to ride around a few miles in our neighborhood!
